On the server's page:
Label: the name shown in the portal and on receipts. Change it under Label and tags; it saves when you click away.
Tags: add up to 12 to group servers. On Instances, you can search by tag, or tick several servers and choose Add tag.
Reverse DNS: under Addresses, choose Edit next to an address and enter a hostname. Leave it blank to clear it.
