For the two-key shortcuts, press the second key within about a second of the first. Single-key shortcuts never fire while you're typing in a field.
To turn the single-key shortcuts off, go to Settings › Preferences and switch off Keyboard shortcuts. ⌘K, ? and Esc always work.
